Always with an eye on the spirit of collaboration, The Ocean and Executive Chef Agustin Balbi welcome a pair of rising star chefs in the form of Michele Abbatemarco (pastry chef) and Guillaume Bracaval (chef), hailing from acclaimed Michelin two Stars restaurant from the iconic Michel Troisgros. Together, three young talents in modern gastronomy will unite for a collaborative 6-course sea-inspired menu, served only for two nights, Friday 24th & Saturday 25th June 2016, to showcase their skill in adapting to Hong Kong’s tastes and identity.
